Gorgonzola risotto

We used to go skiing every winter, generally to Italy because they have the best food. :)

I hated the actual skiing part. I’m hopeless, always falling over and twisting things, or getting hooked on the chairlift by my jacket and making an exhibition of myself. But as a spectator sport, sitting in the sun on top of a mountain with a cup of coffee, it takes some beating. The huts at the top of the mountains served hearty, simple peasant foods at lunchtime, generally either a risotto or a polenta dish. One hut did the most amazing Gorgonzola risotto. I asked for the recipe, and was given some very basic details. Here’s the result.

Sauté a finely chopped onion in 2 tablespoons of oil until transparent. Add ¾ of a cup of risotto rice and stir for a couple of minutes to coat the rice, then add ½ a wine glass of dry white wine. Let it sizzle until it has evaporated, then add boiling stock, a cup at a time, and simmer gently, stirring every few minutes, until the rice is just tender, adding more stock as necessary.

Meantime mash together ½ a cup of Gorgonzola cheese and 2 tablespoons of single cream. As soon as the rice is cooked stir in the cheese mixture and cover with a cloth and saucepan lid for 5 minutes to allow the flavours to develop. Serve with a good grinding of black pepper and grated Parmesan cheese.
